I believe the pancakes at Clinton Street Baking Company have the power to change the world. Mainly because they are the most delicious things I’ve ever eaten and if other people ate them too they’d be happy forever. Also because they’re served with maple butter. Yep. That’s two sticks of unsalted butter to one cup of maple syrup. Drizzled. Dipped. Soaked. In the wise words of Bobby Brown, it’s “your prerogative” how you coat your fluffy pancakes.
BTW, who knew that’s how you spelled the word prerogative? That would make an excellent spelling bee word. I know I'd be stumped.
Okay, back to the pancakes. Each bite is fluffy, cakey but not overly sweet, and sprinkled with powdered sugar. Choose between blueberry, banana walnut, or chocolate chunk and go to town. February is actually National Pancake Month and every day Clinton Street Baking Company celebrates with their own creation. I normally stop in on my bday (Valentine’s Day) and enjoy their special pancakes with raspberry caramel sauce and fresh raspberries and chocolate chunks. I may or may not ask for extra maple butter.
